Light Whole Wheat Bread....

I finally have this bread to the point where it makes a great piece of toast, and a great sandwich. It has no sugar or honey in it, but it tastes really good. The poolish it starts from ferments overnight which brings out the wonderful flavors in the whole wheat. I might experiment with adding some cereal grains into it, but hate to ruin a good thing!!
